Echo is a new project for us. Each year, we will make two different wines from the same fruit - like an echo, these wines will be reminiscent of each other but individuals. The idea behind Echo is to explore methods and styles of winemaking. To push ourselves as winemakers and to experiment with ideas which we can incorporate in our other wines. For this year’s Echo, we worked with some Gewürztraminer sourced from a tiny vineyard in Yamhill-Carlton AVA called McIvor and some Pinot Noir sourced from a vineyard on the east side of the Eola-Amity Hills AVA called Sylvia’s - about 75% and 25% respectively.

We destemmed both the Gewurz and the Pinot and cofermented them on skins for four days. After four days we pressed off the fermenting juice and allowed the wine to continue fermenting in a stainless steel tank. When the wine reached about 13 g/l of sugar, we racked half of the wine out of the tank through a chiller to pause fermentation and bottled it cold, sealing with crown caps to finish fermenting in bottle - as a Method Ancestrale - or naturally sparkling wine. The bottles were then placed in cases outside in the September sun to heat up and complete fermentation. It will shortly be disgorged, recapped and ready for the market. The remainder of the fermenting must finished in tank and was racked to a barrel where it was aged for 3 months and then bottled as a still orange-ish rosé.

Echo

As we wanted to stay as true to the fruit and wine as we could, neither wine is filtered or fined in any way. The Method Ancestrale is sulfur free and the Rosé is minimally sulfured. The resulting wines are hazy, tannic, floral and unique.
